  • 2-3 bananas, very ripe, mashed
  • 1 teaspoon baking soda
  • 1/3 cup extra virgin olive oil
  • 2 large eggs, beaten
  • 1 teaspoon pure vanilla extract
  • 1/2 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 1/2 cups gluten free 1 to 1 flour mix, King Arthur

EQUIPMENT

STEP 1
Preheat oven to 350˚.
STEP 2
In a large bowl, mash bananas and add all other ingredients in listed order. Mix well.
STEP 3
Pour the batter into a greased loaf pan, or in a cupcake pan (makes 12 cupcakes).
STEP 4
Bake for 45 minutes.
